Gluten Free Granola

1 cup quinoa flakes
1 cup shredded coconut
1/2 cup pepitas
3/4 cup chopped nuts (almonds, cashews etc)
2 spoons cinnamon
5 spoons coconut oil
handful of goji berries
handful of cacao nibs

Preheat oven to 180′. Add all ingredients (except goji berries) to a bowl and mix together. Spread onto a tray and put in oven for 10 mins. Mix together and put in the oven for another 10 mins. Remove and allow to cool. You may like to add the goji berries now or before you put it in the oven for the last 10mins. The goji berries will crisp up if they are in the oven too long and may taste burnt.

Salmon Veggie Scramble

Add kale, shallots, rosemary, diced tomato and salmon (I used leftover from the night before) to a pan. Heat on low. Add one or two eggs and mix together until the egg is cooked. Easy and tasty!

Coconut Rice Pudding

Another use for leftovers! Mix cooked brown rice with coconut milk. You may like to add some seeds, LSA or protein powder for extra goodness. Top with your choice of fruit and seeds.
